Heidrun Meadery

eidrun Meadery, est. 1997. Our job as meadmakers is to preserve, nurture and reveal this botanical individuality from its creation in the flower to the mead in your glass. We produce sparkling mead varietals from both monofloral and wildflower honeys. Many of our wildflower varietals are composed of honey from beehives we maintain ourselves in various ecosystems in Northern California. We source the honey for our monofloral varieties directly from other beekeepers throughout the US and around the world. The diversity of flower species serves as our palette and winemaking is our canvas.

Style & Specialties

Estate

The meadery operates its own apiaries. They manage the bees and the land, ensuring total control from flower to bottle.

Traditionalist

Dedicated almost exclusively to honey, water, and yeast. They prioritize the pure expression of the honey over adjuncts like fruit or spice.

Monovarietal

A producer that focuses on showcasing single-source honey varietals rather than blends.

Traditional Mead

Honey, water, and yeast only. No added flavors.

Bottle-Conditioned Mead

Mead that undergoes secondary fermentation in the bottle, producing natural carbonation and further aging development.

Sparkling Mead

Mead that is intentionally carbonated, either through secondary fermentation or forced carbonation.

Hyper-Local

Sources honey within a very tight radius of where the mead is produced and consumed.

Complex herbal-floral blend, resinous, variable year to year

Radish

Sharp, pungent, vegetal heat, mustard-like bite

Sage

Light herbal floral, slightly savory, clean dry finish

Geteme

Tastes of sweet, fresh spring flowers with deep notes of rose.

Avocado

Dark, buttery, molasses-like, savory vegetal undertone, mineral-rich finish

Wildflower

Variable floral complexity, unpredictable balance of herbal, fruity, and earthy notes depending on season and region

Hawaiian Macadamia Nut

Buttery, nutty, creamy sweetness, dessert-like richness

Orange

Bright citrus perfume, sweet orange zest, clean floral finish

Carrot
